Ten years ago, I went to a wine and potato chip tasting at a local shop. It was novel and delightful and I loved it. I've always liked bubbles more than wine in general, but that tasting turned into a genuine love of learning — the history behind a method, why a particular chip works with a particular bottle.
Coming out of the Covid pandemic, I found myself missing something simple: an easy excuse to get people in a room together. Sparkling wine tends to get boxed into weddings and New Year's Eve. It only gets a night or two a year to show up. I wanted to pull it out of that box — make it something for a random Tuesday, a girls' night, an office afternoon, not just the occasions it's "supposed" to be for.
